OUR GOALS FOR HEALTHIER LUNCHES
The administration at Corpus Christi School responded to this interest from our parents by forming a committee made up of the vice-principal and parents to review the lunch menu and make healthy changes wherever possible. But most importantly, the menu needed to remain kid-friendly and respond to the interests of our children.
The changes are simple, but dramatic. Whole wheat products have substituted wherever a grain item is used such as pastas and any bread items. Fresh fruits and vegetables have replaced canned or frozen products whenever possible and are utilized as they become available seasonally; the milk we serve is skim. Ground turkey is used in place of or together with lean ground beef. In addition, each meal is balanced with a combination of proteins, carbohydrates and some sugars.
However, the best part of this lunch menu is the input from our children. They are involved in the process and vote for their favorites with those items that do not meet the mark, falling away. They enjoy soups and stews as well as healthy favorites like chicken and “breakfast at lunch” day. The message is clear; almost any favorite food can be made healthier. And there is still room for cake on Birthday Day each month and desserts made with fruits and other natural treats. The children are learning food choice and balance.
The improvements are popular with parents and students alike. Research demonstrates that students who eat healthier meals have better concentration and study skills. Corpus Christi School administrators and parents are working on an A in that class.
